The Beehive Cheese Company makes one of The Cheese Shop’s most unique cheeses. Barely Buzzed, out of Utah, has a full-bodied flavor hinting at butterscotch & caramel, especially near the rind & more lightly into the center of the cheese. The signature rind is rubbed with lavender & roasted & ground coffee beans (called the “Beehive Blend,” a mixture of South American, Central American, and Indonesian beans) bolstering the flavor in this cheddar-style firm cheese.
