The butterfat content of any cheese greatly influences the richness of its flavor. Bries especially are referred to as “double cream” or “triple cream” which translates to the amount of butterfat: 60% for a double cream versus 75% or higher for a triple cream. Belletoile is a mild yet flavorful & creamy Brie that fits flawlessly on any cheese board softening nicely at room temperature without oozing.
