Caciocavallo’s unique shape is also the source of its name which translates to “cheese on horseback”: it’s tied and hung over wooden barrels to drain. This technique allows the cheese to engage in a 360° aging at all times. A pasta filata (spun pasta) cheese, its texture is like a firm mozzarella and its taste can develop into earthy, fruity flavors.
