CHIHUAHUA
Cow's Milk
Mexico
This mild, soft Mexican cheese, similar to Monterey Jack, melts wonderfully over nachos, quesadillas, pizza, queso frito & anything that calls for a good melting cheese. Made in the state of Chihuahua in north central Mexico, the cheese originally went by the name of Menonita, denoting its tie to the Canadian Mennonites who settled in Chihuahua after the Mexican president invited them in 1922. The Mennonites made the majority of the cheese in return for reasonable land prices & a century-long tax break.
