Mountain cheeses like Comté seem to reflect, through hard textures & earthy sharp flavors, the rugged life of its makers—individuals who maintain traditions & customs & somehow capture & translate the flavors of their histories into remarkable cheeses. The land of Franche-Comté in eastern France contains the Jura Mountains & Alps to the Swiss border. Here, in the breathtaking landscape of green pastures & mountainscapes, Comté (formally called Gruyère de Comté) has been made for well over a millennium. Firm with a smooth, yellowish-ivory paste, Comté’s flavor is slightly nutty, subtly sharp with hints of toffee. It melts wonderfully & is used in traditional fondue or try it in quiches or gratins & on top of onion soup. Enjoy it on its own with a Côtes-du-Rhône or fruity Beaujolais & you may find nirvana….
