One of America’s original artisan cheeses, Dry Jack’s appearance into the mainstream market is entwined with WWI when it became a substitute for imported Parmigiano Reggiano. Vella Bear Flag Brand Dry Jack has a creamier mouthfeel than Parmigiano Reggiano though the texture is just as hard & dense. The pale yellow paste carries a flavor that is nutty, sharp & tangy. Formed & pressed in muslin bags, apparent in the indentations on the exterior, the composite rind is a blend of vegetable oil (to prevent cracking as the wheels ages) with cocoa & black pepper, which stops the oil from seeping into the cheese. An excellent selection for a cheese board or try it grated over pasta, soups or tacos.
