Between the 14th & 18th century, Edam’s popularity traversed the seas as & distant lands due to its ability to age & keep well. Named after the town Edam, this ball-shaped cheese, with its red-wax coating, is similar to Dutch Gouda though slightly tangier but just as creamy. Semi-firm with a pale yellow interior, it is made from partially skimmed milk making it slightly lower in fat than most cheeses.
