This is the true Fontina & after which all other versions (Dutch Fontina, Italian Fontal & Fontinella) are modeled. Emanating from the autonomous region of Valle d’Aosta in northwestern Piedmont, the provenance of this alpine cheese extends back to the 13th century. The straw-colored paste is dense, semi-firm & dotted with little eyelets. The flavor evokes the wild grasses & flowers on which the herds graze buttressed with a buttery, mild nuttiness & just a little bite. When melted, like in fonduta or on pizza, the earthiness enhances & contributes to more depth of flavor.
