Originally produced in its namesake village in north-central Catalonia, Garrotxa’s rustic appearance, with a velvety-textured rind sprouting brown & whitish-gray molds stem from aging in natural caves & the growth of Penicillium glaucum. Its exterior contrasts nicely with the bone white to ivory interior that divulges a surprisingly mild flavor with a hint of goaty tang for this semi-hard cheese.
