France may have Roquefort but Italy has Gorgonzola Dolce & Piccante. The Dolce is younger (both in creation & aging) while the Piccante is the more traditional, aged version. The flavor is sharper & bolder than its young counterpart & the paste denser & more ivory in color. Often, the darker the interior, the stronger & more intense the flavor.
