We’re proud to introduce you to an amazing American interpretation of the omnipresent Manchego from the brilliant cheesemakers at the Roth Cheese. This cow’s-milk version uses milk from their local cow dairy co-op & reproduces the well-known basket-weave rind of traditional Manchego. Though made with cow’s milk, this domestic cheese has the same sharp, nutty deliciousness & sweet, mellow finish due to the cinnamon- rubbed rind.
