Hook’s Cheese Company began their cheese production in 1976 making cheddar and swiss. In 1980 they started making other cheese, namely, what turned out to be their award-winning Colby cheese ("Best of Class" award in the World Cheese Championship 1982 and 3rd place at the American Cheese Society Competition 2010). Since that explosive beginning, Hook’s Cheese Company has greatly expanded their line to several varieties of blues, mixed milks, sheep’s milk, flavored cheeses and several others.
3-Year Aged Cheddar:
A colored cheddar that is starting to show the nice acidic sharpness with a good cheddar flavor.
5-Year Aged Cheddar:
An extra sharp cheddar with a nice, full flavor.
7-Year Aged Cheddar:
An extra sharp cheddar with some calcium (calcium lactate) crystals that add a little crunch. This cheddar has a lot of flavor and is a little smoother than the Five Year.
