A true classic, with a semi-firm texture & mildly nutty flavor, Jarlsberg is made from partly-skimmed milk making it lower in fat then most cheeses though sacrificing no flavor.  Similar to its ancestor Emmentaler, though slightly creamier & sweeter, this Swiss consistently delivers a wonderfully satisfying taste.
