Similar in recipe to Kasseri & Kefalotyri, Kefalograviera is made in smaller wheels & cured differently giving it a slightly salty flavor & firm texture that sets it apart. Good for grating but especially perfect for Saganaki, a traditional Greek dish of cooked cheese in butter with fresh herbs finished with lemon juice & brandy then ignited—Opa!
