The paste color is golden, with abundant crystallization. The aroma portrays notes of roasted hazelnut & caramel with some meaty and “cavey” signatures. Though it’s a hard cheese, the spectacular texture is velvety, melts in the mouth & carries a flavor of nuts, salt & hints of caramelization ending with a complex, long finish.
