Cow's Milk
Fresh mozzarella, part of the pasta filata (“spun paste”) family, starts production like any other cheese. After the curds have been cut & drained, they are amassed & set to steep in hot liquid until they reach a consistency where they can be stretched, kneaded & shaped. This step, called filature, sets fresh mozzarella apart from other cheeses & provides its unique texture. Our fresh mozzarella offers an uncomplicated, clean flavor that perfectly accompanies any dish from pastas & sandwiches to appetizers & salads.
