The cheesemakers of Emilia-Romagna, the prolific food region in northern Italy, create the world’s most famous (& most imitated) cheese: Parmigiano Reggiano. Originating in Reggio nell’Emilia, a central province in this region, this cheese is taken very seriously & production (including grazing zones & aging) is strictly regulated by law. Made in large wheels weighing 66 to 88 pounds, it is a wonderfully hard & granular cheese with colossal flavor beneath its buff rind. Our Parmigiano Reggiano is aged 2 years & displays a yellowish-whitish interior dotted with white specks (protein deposits). The full-bodied flavor is slightly salty, sharp & nutty with a crumbly texture making it a good choice for grating, shaving or drizzle with honey
