Perhaps one of the most widely enjoyed cheeses made, this young sheep’s milk cheese from Tuscany is produced all over the region. Though it is often compared to Spanish Manchego, the flavor is more nuanced with greater sheepy nuttiness & milky sweetness. Pair it with a crisp Pinot Grigio or Chianti.
