As versatile as Parmigiano Reggiano but providing a more delicate & nuanced flavor, the solid & smooth straw-colored interior gives way to sweet nuttiness with hints of fruit. Piave Vecchio works wonderfully as a table cheese paired with a fruity red wine, shaved over a salad or vegetables & perfect for grating over a pasta dish.
