Our much-loved diva of The Cheese Shop! Prima Donna is like the ugly duckling of Goudas. Told that their cheese did not meet the requirements to be officially called a Gouda, the cheese makers went ahead & made it anyway. The result? An impeccable flavor combination reminiscent of Parmigianno Reggiano’s savory sharp, salty bite & an aged Gouda’s sweet flavors of caramel & butterscotch. Prima Donna’s ivory paste is adorned with button-sized holes leaching small amounts of moisture & that wonderful crystalline crunch of calcium lactate. An excellent after-dinner cheese served with a sherry or Madeira wine, Prima Donna is also a great cheese to pack for trips or simply enjoy at home.
