A younger version of its sibling Ossau-Iraty, P’tit Basque comes from the French Basque region. Both cheeses represent the “brebis Pyrénées,” a general term for any sheep’s milk cheese from this region made in a particular local Basque manner. This means that more than one type of cheese can be called Ossau-Iraty or P’tit Basque but feel assured that these hand-made cheeses always maintain high quality. The natural rind, reminiscent of Manchego’s cross-hatched pattern, is sealed to prevent moisture loss which contributes to the uniformly smooth, almost taffy-like texture & slight creaminess. The paste is a light golden color & semi-firm with a flavor that is mild, subtly fruity & nutty. *availability varies
