This fresh cheese, also called Queso Blanco, can be thought of as a Mexican feta: crumbly, slightly salty, mild & holds its shape when heated. Its qualities stem from the simple process by which it’s made: fresh whole milk is heated then an acid, like vinegar, is added to stimulate coagulation (instead of a rennet or culture like most cheese). Queso Fresco perfectly tops quesadillas, rice, beans or nachos.
