While Raclette can certainly be enjoyed simply with a knife & a loaf of crusty sourdough, this cheese famously institutionalized Raclette parties concentrated around the Raclette grill. Stemming from the French verb racler, which means “to scrape,” it is melted using a special heating element then scraped over boiled potatoes & served with pickled vegetables. The tan-colored washed rind contributes to the big, beefy aroma & flavor of this semi-firm cheese. You do not need any special equipment though to enjoy Raclette—try it in mashed potatoes or sauces.
