English Stilton, along with French Roquefort & Italian Gorgonzola, rounds out the Big 3 of the world’s top blue cheeses. Both the government & The Stilton Cheese Maker’s Association define & regulate the production of Stilton, England’s only name-protected cheese. Most Stilton today is produced in Leicestershire & Nottinghamshire though its name stems from the market town where it was sold. Semi-hard & crumbly with a full-bodied blue flavor, Stilton is often considered the “King of the Blues.”
