Meaning “drunk” in Italian, Ubriaco comes from Lombardy in northern Italy & Antonio Carpaneda of La Casearia (makers of Tavoliere, Perlagrigia & Vento D’Estate). Bathed in Raboso wine must (the grape skins that remain after pressing for wine) during its last six months of aging, this robust hard cheese carries a truly unique sharp flavor with obvious notes of grape & fruit. The method of soaking cheese in wine remnants is a traditional practice used to help preserve cheese throughout the early winter months. Beneath the stunning purple-hued rind, Ubriaco’s paste is off-white with a flaky crumbly, cheddar-like texture.
